Durian Pancake / Mango Pancake / Cempedak Pancake/(makes 6)
- Flour - 60g
- Sugar - 20g
- Egg yolk - 3 each
- Butter - 10g
- Milk - 15ml
- Mango / Cempedak / Durian
- Fresh whipped cream
Mix three egg yolks in a bowl, then add sugar and stir.
Add sifted flour in the mixture and stir.
Add milk, then melted butter and stir.
Lightly oil the fry pan with a paper towel. Put 2 spoonfuls of mixture in the pan on low heat so it won't burn. Turn the pancake with care. Wait until the pancakes cool down. Wrap it up with mango slices and some whipped cream before serving.
Note: It takes some practice to make a perfect pancake with no holes, no burns and the right thickness. Don't be frustrated if it does not turn out looking like the one in the restaurants, it's still very edible and very yummy.
